HOMEMADE ROASTED  SPICY LOTUS SEEDS / SALTED EVENING SNACKS
Lotus seeds are very healthy food due to good sources of antioxidant and many beneficial elements like iron, protein and calcium etc. We mostly use this in fast or vrat as sweet or salted recipe. Today we try to make it something spicy and crispy snacks.

INGREDIENTS:-

* Lotus seeds - 50 gm
* Turmeric powder - 1/4 tsp
* Black pepper - 1/2 tsp
* Chat masala - 1 tsp
* Black salt - 1/2 tsp
* Ghee - 1/4 cup

METHOD:-

1. Heat ghee in a pan or kadahi on low medium flame
2. Put turmeric powder and after that lotus seeds
3. Stir fry lotus seeds until crispy
4. Drain out the lotus seed on kitchen paper towel to absorb excess oil
5. Now sprinkle all spices on hot lotus seeds either fingers or  thin strainer
6. Mix it by hand and coat with spice on lotus seeds evenly
7. After cooling it will become crispy
8. Now store in a tight container and whenever you want to taste , ENJOY😊😊

NUTRITIOUS CRUNCHY SPROUT SALAD

HOW TO MAKE SPROUTS SALAD
SPROUTS lentil (dal) salad is a very colourful, refreshing and healthy dish that is a crisp and tangy salad with basic indian flavours. Refreshing sprout salad for the Spring and Summers that has no oil, but just juice from lemon, a dash of sugar, salt and pepper and flavoured with lots of  raw food in your diet. Sprout salad is simple to make  and very delicious and rich in protein. Give it a try, it just takes a little planning to make your meals healthy.

 INGREDIENTS :-

* Mix Sprouts - whatever u like (Mung Moth Channa)-1 bowl
* Oil - 1tsp
* Cumin seeds-1/4 tsp
* Asafoetida -1 pinch
* Salt to taste
* Turmeric -1/4 tsp
* Ginger -(grated)
* Green chilli -1 or 2 finely chopped
* Black pepper depending on your choice
* Lemon juice -1/2 tsp
* Cucumber,Tomato, Radish & Beetroot  -Small size chopped in square shape
* Green coriander leaves for garnishing

METHOD:-

1. Heat oil in pressure cooker and put cumin seeds & asafoetida.
2. When it crackle then add sprouts and all ingredients except cucumber, tomatoes, radish, & beetroot.
3. Place 1 /2 cup of water & mix it well.
4. Close the lid ,Let 2-3 whistle come.
5. Now open lid & put cucumber, tomato, radish and beetroot grated ginger green chilli black pepper, & lemon juice.
6. Mix well and take out sprouts into a bowl
7. Garnish with green coriander leaves and serve

NOTE:-
 If you can add paneer and onion too as you like.

HOME MADE DIET MIXTURE (SALTED) TEA TIME

HOME MADE DIET MIXTURE
However DIET MIXTURE is available in market but there is no comparison of home made. You can also make this at home very easily without any tension. i made it at home and it came out awesome. Let us see how to make diet mixture


INGREDIENTS :-
* Puffed rice(Murmure) - 3 cup




* Cornflake -1/4 cup

* Poha/ Chivda/rice flake -1/4 cup
* Peanuts - 1/4 cup
*Lotus seeds - 1/4 cup


* Curry leaves - 12 to 15 leaves

FOR TEMPERING:-

* Cooking oil -1 tbsp
* Turmeric powder - less than 1/4 tsp
* Salt to taste
* Chaat masala - 1/4 tsp
* Sugar - 1 tsp (optional)
* Cashew nut,  raisins and almond - as needed

METHOD:-

1. No need to microwave Kellogg's corn flakes due to its crispiness, otherwise normal corn flexes you will have to microwave for 1 minutes on high power. Spread 3/4 cup  of cornflakes on the turntable and microwave it. Please keep an eye that it is not getting burnt.
2. you can also roast in heavy pan or kadahi for 30 seconds on low flame and check it becomes crispy
3. Remove and proceed the same for puffed rice or murmure, puffed lotus seeds and peanuts one by one.
4. keep it in wide plate or bowl and let it cool down
5. Keep murmure on turn table and microwave it for 1minutes 30 seconds. Take out and mix it along with cornflakes
6. Then spread peanut and microwave it for 2 minutes 30 seconds
7. Heat oil in pan and switch off flame.
8. Add curry leaves, turmeric powder, salt, chaat masala in heated oil. Now mix everything very well in this species
9. Now DIET MIXTURE  is ready for tea time . ENJOY

NOTE:-
 I  want to give some tips to make this diet mixture at home

* Times varies based on the microwave and different ingredients, so you adjust your time according microwave and ingredients. i have given just  an idea that i used.
* When you microwave, make sure everything comes out crispy. Otherwise the whole mixture will become soggy in a day or two.
* Dry fruit, raisin and sugar can be added depending on your choice.
* Check its crunchiness by tasting it and then add to the mixture.
* If u don’t want to go for microwave option,u can either use deep frying or baking in convection mode.For baking in convection mode,preheat oven in 180c for 10 minutes.Then spread the cornflakes and bake for 4 minutes.Make sure u mix it once in awhile and also it should not be burnt.Keep an eye after 2 minutes.
* If u don’t want to microwave Murmure or puffed rice,cashews and peanuts. you can roast them in little oil or ghee and add to mixture.But make sure everything is crispy
* According your choice you can add poha or gram dal
* Check for taste. Store in a airtight container. It stays crispy for more than a week

Namkeen Seviyan is very tasty recipe It is also called vermicelli. Due to less oil people prefer it as light snacks in the breakfast time.In this recipe either more vegetables are used or less depanding on your choice. Let us see how to prepare Namkeen Seviyan.........

INGREDIENTS: -

* Roasted Sevinyan 2 cup,
* Green pea 1/2 cup,
* Carrot 1piece,
* French beans 50 gm,
* Cabbage small,
* Cauliflower small,
* Capsicum,
* Green chilli 2 piece,
* Grated ginger,
* Lemon 1,

.For TADKA: -

* 2 Tbs oil,
* Cumin seeds,1/4 teaspoon,
* Asafoetida,a pinch,
* Turmeric,1/4 tsp,
* Salt to taste,
* Red chilli powder,
* Raisins,20-25.
For GARNISHING: -
* Coriander  leaves (washed),
* Nylon sev made by wheat flour accordingly choice.

PREPARATION: -

* Cut all vegetables in equal size of pea  and wash,
* Wash coriander, green chilli & cut it,
* Grate ginger 

METHOD: -

Heat a pan & oil. Now add cumin seeds & asafoetida.when it tampered ,then add ginger & green chilli, turmeric powder.Add cabbage,carrot french beans,cauliflower,potatoes,peas and  shoute on midium flame till it take out brown on colour. Add salt, red chilli powder. At last add seviyan and 3 cup of water mix with vegetables .When dry water from seviyan then turn off the flame & put raisins, lemon juice.

Garnish with coriander leaves, or nylon sev as u wish.
Serve it with chutney.

NOTE :-
Roasted vermicelli is available in the market,if u don't get then u can take plain vermicelli and roast at home.
